We serve food and drinks on the lands of the Ngunnawal and Ngambri people, whose land and sovereignty was never ceded.
We acknowledge these Traditional Custodians and pay respect to Elders past, present and emerging, of the lands on which we work and live.
Pilot
This is a restaurant that is truly us.
We (Mal, Dash and Ross) opened Pilot in 2018 with a goal to create a welcoming space with authentic hospitality.
Hosting a 24 seat dining room and small outdoor area we are located at the back of the local shops in Ainslie, Canberra.
We have chosen to offer a tasting menu to all guests.
The menus created by Malcolm Hanslow and Syed Rashid are inspired by our experiences, the people we have met and worked with and nostalgic dishes from times past.
Most of all it is about our love for food, fun and great hospitality.
Our entire beverage list by Kane Nelson is all Australian.
It includes wine, beer, spirits, aperitifs, amari and everything in between.
On Thursday evenings we allow BYO with all corkage sales going to a chosen organisation for the month.
Our non alcoholic and cocktail program created by Tom Opie uses native ingredients, local produce and ingredients that would otherwise be considered waste.
We offer three optional pairings to accompany the tasting menus. You are also welcome to select as you go from the beverage list.

If you are visiting and need somewhere to stay our friends have a cute apartment near by.
During the warmer months you can grab a drink at That Other Place before or after your reservation.
Both Pilot and That Other Place are available to hire for private events.
